Cooking Mondays #3


This was soooo good! Best part is, I made my own bread for the stuffing. I made this for dinner, as the main part of dinner. Luckily I made 4, because I ended up eating 2. This would have been truly better as a side. And though they are yummy! these are best not eaten as leftovers. They get mushy, and since the bread is toasted. It doesn't have a very good texture the next day. 


When you hollow out the tomatoes, make sure you don't take out a lot of the meat from the tomato. Just all the juicy watery stuff. The tomato will absorb most of the flavors, and with all the watery stuff out of the tomato the eggplant won't get to mushy. 


And the balsamic reduction is a must, it says in the book that it's optional. But I really think it's the perfect finishing touch. Just the right amount of sweetness on top of hearty veggies!
