Vegan Pumpkin Cinnamon Whoopie Pies
These my friends are AMAZING!!! As a converted vegan, I really miss sweets (seeing as that was most of my diet). I'm still working on finding and creating healthy alternatives, but sometimes it's just nice to pick something up, buy it and not have to worry about the ingredients. When rare times like that happen, I feel "normal" lol I guess that's a weird word for it. It's like a sigh of relief, I don't have to stress about ingredients and I can eat things I love. It's times like that, that fill me with pure joy and I get the biggest derpest smile on my face.
Now lets talk about these whoopie pies! I've seen these in stores and I can't eat them, BUT I WANT TO! They look all cute and small and the perfect little sweet treat to have with tea. My friend CynicalSniper bought this for me for Christmas, they were perfect! They were each individually wrapped in plastic (to keep in the freshness!). When I ate my first one I almost cried! I haven't had a vegan baked good (not made by me) in a year or so. Last time was at a vegan cafe' and it was carrot cake. They were perfect and moist and tasted like heaven! The cream was sweet, but not to sugary and mixed very well with the spices of the pumpkin cookie. Another great thing to know was my friend bought these off Etsy, from LoveThyBaker. Something that we should all do every once in a while is support small companies! CynicalSniper did that this Christmas, and I'm happy she did. Remember to support your local or not so local artist. They truly do make things more unique then the some big ol factory.
