Hearty Oat Loaf

YAY BREAD! who doesn't love a good loaf of homemade bread? I love it that's for sure.

 A while back I started making my own bread, as a way of seeing what I was eating. Store bought breads are convenient but are full of lots of stuff . I can't even pronounce half of the ingredients or know what they are. And as a vegan and someone who cares alot about what goes into my body, it's very important for me to know what I'm eating. So now I make my own breads, I'm no chef and not everything comes out perfect. But I hope to get better!

  Now this isn't a vegan cookbook, my boyfriends mom bought me this book back when I wasn't even a vegetarian. But by the time I decided to bake this recipe I was a vegan and had to change some of the ingredients (which in my option is the best part).

The recipe is called Hearty Oat Loaf, and it was very easy to make. I didn't even have to change alot of the ingredients. I just used soy milk for the regular milk and a mixture of apple sauce and baking powder for the 1egg. I'm still learning about egg substitutes, but the apple sauce helps the bread from getting to hard and dry. And don't worry, you don't taste any trace of the apple sauce after it's baked.

This recipe was also easy because it was one of those "mix everything together and bake" kinds. So you didn't have to let the dough rise and knead it a million times. And it only took 40 to 50 minutes to bake. So this recipe would be perfect to make right before any meal.

 You can cut this bread pretty much any way you like. In the directions it says to use a 9-in round baking pan, but I'm assuming you could just as well use a bread loaf pan to. I decided to cut it in half and then into sandwich bread slices. Since this bread was to last us the week and we like sandwiches!

So go now! GO MAKE SOME YUMMY BREAD! The weekends coming up, and that would be a perfect time to try!

And then when your done with the bread making, go on a picnic! or invite some friends over for lunch, making sandwiches from the bread you just baked! Your friends will be so impressed! :D
