Well I'm on vacation so my days blend together. haha! You all know the feeling. 
Always, so I found a recipe for Sweet Potato Perogies! Recipe  
I already had the mashed up sweet potatoes from Tom's mom, and really needed to use it before it went bad. So having this come in my email was perfect timing.

So I've never made perogies before, we usually just got the frozen ones that you just fry in a pan. With that being said, making periogies is incredibly easy! I never knew how easy it was, and now I don't think i'll every buy the frozen kind again.

Making the filling so easy as I already had the mash sweet potato. I had onions, but I also bought some green onions that needed to be used. Onions are onion right?  I'm gonna say at this point I should of added more seasoning. Just to give it more of a kick.

| Prepping Station! | 
The dough was surprisingly easy, I thought there would be more ingredients to perogie dough. Stuffing them was a learning experience, but I did get the hang of it! Other broke 3 I think.... haha
I forgot to take a picture, but I boiled them in salt water till they floated before I fried them. I fried them with earth balance butter. I also had to open the windows in the kitchen because of all the smoke. So just letting you know, that might happen. 
Final Shot! I served the periogies with corn and green beans in a light butter sauce and some vegan sour cream. So this dinner really helped me use up some things that I had little of or that were about to go bad. And I had everything on hand, didn't need to buy a thing.
