So for this I just used earth balance butter, and I just used the same sugar throughout. I was lucky enough to find some vegan vanilla yogurt at my local Kroger. Yay for the slowly growing vegan/organics section. I also just used dried cranberries, no cherry flavored anything.
This was a pretty easy recipe to make, are scones usually this easy to make? Why did I always think it was some magical british magic that this american couldn’t understand? I will say the dough gets a bit tough to work with. So I was surprised but I also never dealt with dough with hard, so I was afraid of how to handle it. Next time though I’m throwing in a couple punches.
Now how do they taste, well I can say they tasted AMAZING!!! I didn’t think I would like them because of the cranberries, but it all balanced out nicely. They would be great for breakfast or tea. They weren’t hard or dry, but rich in a heavy way. This is also good, because it means I can only handle eating 2 and wasn’t able to eat all of them in one day.
Though with visiting friends and roommates, they were gone in 2 or 3 days. I and everyone else that ate them those days highly recommend this recipe.
