By far super easy! I bought more of the veggies that I liked in the recipe. So lots of mushrooms and onions! I did a very small amount of shopping for this recipe, and luckily we had bamboo skews laying around… I have no idea where they came from.

While I was at Meijer I noticed that the white mushrooms were cheaper then the portobello. I thought of maybe getting the cheaper white mushrooms, but then I started to wonder why this recipe called for portobellos. So I looked up the difference, portobellos have a way intense flavor, way more then your standard white mushroom. And then I thought to myself, why would I make a tasteless vegan meal? I’m vegan! My meals are supposed to pop with flavor and spices. So I threw in a couple more bucks and grabbed the portobellos.

These came out soooooooooo good! We had some left over rice from the night before that turned out to be the perfect side. I thought about making a pilaf side dish. But I think after eating it with plain rice that the plain rice was the perfect option.
