Lemon Pepper Chickpea Salad
Another quick pick from the endless folder that sits delightfully on my desktop. I’ve been pretty busy with work and getting home late so me cooking isn’t practical. But I did get to fit this in one weekend. Since I wanted it to last a while, I doubled the recipe.
Since I used the last of my Just Mayo and had to dip into the Nayo Whipped, I got to compare. Just Mayo has that normal mayo texture and consistency. Nayo Whipped on the other hand seems greasier and would slide off my butter knife as I tried to get it out of the jar. Just Mayo wins in my option, but Nayo Whipped is a good replacement if there’s just nothing. Be happy you have at least one vegan option in vegan mayo.
So lemons… I had to use the juice of two… I felt like I was ruining the recipe. What would possibly use this much lemon juice! But I squeezed on, and continued to pick seeds out of the mixture as I went. Now lets talk capers, I hate them, I hate them so much! How can something that’s pickled, but soooo gross? But I also feel I’m not a super great cook, and so I stick to the recipe. Plus capers is just one of those things that tastes gross on it’s own but might end up super yummy mixed with other stuff.
So after mixing all that together, I picked out some dipping foods. Celery, Salt and Pepper Triscuits and wheat bread. And it tasted great. Very lemon and peppery, but that’s the name of the recipe. I was so really good though, better then I thought. It also lasted about a week, and was used for lunches and dinner and snacks. It was great, I highly suggest you make this.. if you like lemon pepper type things.
